I'm a big fan of Mexican food. New Mexican cuisine is similar but different because it has an American Indian influence to it. So, over the course of a week we pretty much ate our weight in sopapillas, chiles, enchiladas, chile cheeseburgers and many other kinds of New Mexican specialties!
